Balsamic Brussels Sprouts
Savory and crispy, these Brussels Sprouts are full of flavor with no added sugar. Look for quality bacon without nitrates/nitrites or omit bacon and use olive oil to make it vegetarian.
Ingredients
- 3 slices bacon chopped (or omit and use olive oil for vegetarian option)
- 3 tbsp roasted salted pumpkin seeds
- 3 small shallots thinly sliced
- 1/4 tsp sea salt divided
- 1 lb Brussels sprouts trimmed and shredded or chopped
- 1 tbsp balsamic vinegar
- ΒΌ tsp ground black pepper
- 3 tbsp roasted salted pumpkin seeds
Instructions
- Add bacon to a large skillet and cook, until bacon is crisp, and fat has rendered. Transfer to a plate.
- Reduce heat to medium-low. Add shallots to skillet and season with salt and cook, stirring often, until golden, about 8 minutes. Increase heat to medium; add Brussels sprouts and cook, stirring often, for 1 minute. Add vinegar and cook 1 to 2 minutes more, until Brussels sprouts are wilted. Spoon into a serving dish and garnish with pumpkin seeds.
