Gluten Free Bread

A great addition to any meal, this gluten free and low carb recipe uses only 8 ingredients and can also be made dairy free! A great bread to toast with avocados or your favorite topping!

Ingredients
  

  • 3 tbsp coconut flour
  • 2 tbsp ground flaxseeds + 1 tbsp whole flaxseeds
  • ½ tsp baking soda
  • ½ tsp sea salt
  • 1 cup almond or cashew butter
  • 4 large eggs room temperature, separating whites and yolks
  • ¼ cup milk or plain unsweetened nut milk of choice
  • 1 tbsp apple cider vinegar

Instructions
 

  • Before turning oven on place one rack on lowest rung and one on middle rung. Preheat oven to 350 degrees F. Fill an oven safe dish with water and place on lower rung. 
  • In a mixing bowl mix together dry ingredients.
  • To a second mixing bowl add EGG YOLKS and almond or cashew butter. Mix until smooth with hand mixer, about 1 minute, then add in milk and vinegar. Mix to combine.
  • Add in dry ingredients and stir together.
  • In a clean dry bowl with dry beaters add egg whites and beat until stiff peaks form. With a spatula, add half the egg whites to the mixture, stir then add the second half of the egg whites until all is combined well. 
  • Prepare a bread pan with cooking spray or line with parchment paper. Transfer mixture into bread pan and sprinkle with whole flax seeds if using.
  • Bake for 45-50 mins, when golden and knife comes out clean in middle, let cool for 10-15mins before transferring out of pan. Let cool completely before slicing.
  • When fully cooled, slice and wrap left over bread to store in refrigerator.

Notes

Keeps well up to about 3 days.
