Herbed Meatballs
These meatballs make a flavorful, easy dinner and work well for leftovers for lunch the next day! They're gluten and dairy free but not flavor free!
Ingredients
- 1½ lb ground beef
- 1 large egg
- ¼ cup coconut flour or other gluten free flour that is finely ground
- 2 cloves garlic minced
- 1 tsp dried parsley
- 1/2 tsp dried or fresh oregano
- 1/2 tsp dried or fresh basil
- 1/2 tsp sea salt
- 1/2 tsp black pepper
Instructions
- To make meatballs start by adding all ingredients into a large bowl, mix thoroughly until everything is well combined. Form meatballs by using about 2 heaping tablespoons of mixture, form into balls.
- Prepare a large skillet by adding sauce into skillet and heating to medium/medium high and place meatballs into sauce pan. Simmer meatballs in sauce until they are fully cooked, about 15-20mins.
- Serving suggestions: Serve with riced cauliflower to keep carbohydrates lower or a gluten free higher protein pasta.
