Herbed Meatballs

Herbed Meatballs

These meatballs make a flavorful, easy dinner and work well for leftovers for lunch the next day! They're gluten and dairy free but not flavor free!

Ingredients
  

  • lb ground beef
  • 1 large egg
  • ¼ cup coconut flour or other gluten free flour that is finely ground
  • 2 cloves garlic minced
  • 1 tsp dried parsley
  • 1/2 tsp dried or fresh oregano
  • 1/2 tsp dried or fresh basil
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper

Instructions
 

  • To make meatballs start by adding all ingredients into a large bowl, mix thoroughly until everything is well combined. Form meatballs by using about 2 heaping tablespoons of mixture, form into balls.
  • Prepare a large skillet by adding sauce into skillet and heating to medium/medium high and place meatballs into sauce pan. Simmer meatballs in sauce until they are fully cooked, about 15-20mins.
  • Serving suggestions: Serve with riced cauliflower to keep carbohydrates lower or a gluten free higher protein pasta.
