Salmon with Honey and Blood Orange Glaze

Ingredients
  

  • 3 Salmon fillets
  • 4 Oranges juiced, preferably blood oranges but can use what’s available
  • 1/2 Teaspoon Orange zest
  • 2 Tablespoons Honey
  • 1 Teaspoon Avocado oil ghee OR olive oil
  • Sea salt and pepper

Instructions
 

  • In a small saucepan add honey, juice of oranges, and orange zest. Simmer until combined and liquid reduced down to a thicker syrup type consistency. Once mixture is complete, set aside and turn on oven broiler to high.
  • Season salmon fillets with salt and pepper. On a baking sheet lined with parchment paper place salmon fillets on baking sheet and rub with oil or melted ghee and drizzle half the orange/honey mixture. Broil for 3 minutes. After about 3 minutes of cooking brush on the remaining glaze and cook another 3-4 minutes until salmon is cooked to preference.
  • Serve with your favorite side like a salad, roasted veggies or quinoa.
