Slow Cooker Dairy Free White Chicken Chili
This recipe is a crowd pleaser and dairy free! It's comforting and flavorful and an easy one pot dish to make!
Ingredients
- 1 tablespoon olive oil or ghee, or avocado oil
- 1 1/2 pounds boneless, skinless chicken breast
- 2 cups chicken bone broth or chicken stock
- 1 lime juiced
- 2 4- ounce cans diced green chilies
- 3/4 cup unsweetened full-fat coconut milk from a can (shake/mix well) do not use the kind that’s in a carton and very thin
- 2 15- ounce cans great northern beans
- 1/2 large white onion diced
- 3 cloves fresh garlic minced
- 1/2 tablespoon paprika
- 1 tablespoon oregano
- 1 tablespoon cumin
- 1 teaspoon sea salt
- 1/4 teaspoon black pepper
- Optional Topping Ideas: cilantro, avocado slices, dairy free cheese, jalapenos
Instructions
- In a slow cooker place olive oil or ghee, then the chicken and add all other ingredients. Stir to mix together. Set on high for 2-4 hours or low 4-6 hours. Once finished, take the chicken out and put in a medium bowl, using two forks shred chicken and add back into slow cooker. After spooning into bowls add toppings and enjoy!
