Ground Turkey and Cabbage Bowls with Thai Sauce
Veggies and lean protein come together to make this a flavorful, low carb meal and only uses one pan!
Ingredients
- 1 lb. ground turkey or chicken
- 1 Tbs. sesame oil
- 2 cups carrots shredded
- 1 cup or more cabbage, shredded
- 1/2 cup cilantro chopped
- 3/4 cup green onions chopped
- 4-5 garlic cloves minced
Thai Peanut Sauce
- ½ teaspoon fresh ginger grated or powder ginger
- ¼ cup maple syrup (real, not artificial flavored)
- ¼ cup peanut butter
- ½ cup coconut aminos or soy sauce
- 3 Tablespoons sesame oil
- 4 Tablespoons rice vinegar
- 2-3 teaspoons hot sauce
Instructions
- Start by making the Thai Peanut sauce. Whisk together in a medium bowl: ginger, maple syrup, peanut butter, coconut aminos (or soy sauce), 3 Tablespoons sesame oil, rice vinegar and 2 teaspoons hot sauce (more or less according to your preferences).
- In a large skillet heat 1 Tablespoon sesame oil over medium heat. When oil shimmers, add ground turkey, stir and break up with a spatula as it cooks. When turkey is fully cooked add in the garlic, shredded carrots, cabbage, green onions and cilantro to the skillet. Stir and cook for about 5 minutes.
- Pour the peanut sauce on top of the cooked meat and vegetables and combine together. Garnish with fresh cilantro before serving.
