Ground Turkey and Cabbage Bowls with Thai Sauce

Veggies and lean protein come together to make this a flavorful, low carb meal and only uses one pan!

Ingredients
  

  • 1 lb. ground turkey or chicken
  • 1 Tbs. sesame oil
  • 2 cups carrots shredded
  • 1 cup or more cabbage, shredded
  • 1/2 cup cilantro chopped
  • 3/4 cup green onions chopped
  • 4-5 garlic cloves minced

Thai Peanut Sauce

  • ½ teaspoon fresh ginger grated or powder ginger
  • ¼ cup maple syrup (real, not artificial flavored)
  • ¼ cup peanut butter
  • ½ cup coconut aminos or soy sauce
  • 3 Tablespoons sesame oil
  • 4 Tablespoons rice vinegar
  • 2-3 teaspoons hot sauce

Instructions
 

  • Start by making the Thai Peanut sauce. Whisk together in a medium bowl: ginger, maple syrup, peanut butter, coconut aminos (or soy sauce), 3 Tablespoons sesame oil, rice vinegar and 2 teaspoons hot sauce (more or less according to your preferences).
  • In a large skillet heat 1 Tablespoon sesame oil over medium heat. When oil shimmers, add ground turkey, stir and break up with a spatula as it cooks. When turkey is fully cooked add in the garlic, shredded carrots, cabbage, green onions and cilantro to the skillet. Stir and cook for about 5 minutes.
  • Pour the peanut sauce on top of the cooked meat and vegetables and combine together. Garnish with fresh cilantro before serving.
